What Causes Vitamin B-12 Deficiency?

According to the National Institutes of Health (NIH), most people in the United States get enough B-12 in their daily diet. However, those who have a primarily vegetarian or vegan diet can sometimes miss out on these essential nutrients because they do not consume foods derived from animals. 

Vegans, in particular, must have their Vitamin B-12 levels checked regularly by their physicians or other healthcare professionals. This is especially crucial if they have not eaten fish, eggs, or meat for five years or longer. 

Because Vitamin B-12 is usually found in animal-based-based proteins, it is not unusual for a physician to advise these vegans and vegetarians to take a dietary supplement that will provide it. Some health foods are fortified with synthetic B-12, like some plant-based milk brands.

Lind determined the sailors could restore their health by consuming lemons, limes, and oranges, but it wasn’t until the late 1920s that research about ascorbic acid was published and it became more widely known by the public as Vitamin C. 

Vitamin C has been the subject of much research since then. It was during the 1960s that the chemist, chemical engineer, and peace activist Dr. Linus Pauling and two colleagues founded the Institute of Orthomolecular Medicine in Menlo Park, California. The institute was later renamed the Linus Pauling Institute of Science and Medicine and was where Dr. Pauling directed his well-known works on the values of Vitamin C as a potential help for the common cold, heart disease, and even some forms of cancer.

Can A Melatonin Supplement Improve Sleep?

What is Melatonin?

It may surprise most people that humans have used apple cider vinegar for more than 10,000 years for various home and healing purposes.

What is Apple Cider Vinegar?

Anytime an alcoholic beverage has an alcohol content greater than 18 percent, it can be made into vinegar. A naturally occurring bacteria known as acetobacter aceti can convert the alcohol into acetic acid, the formal name for vinegar, once there is enough alcohol.

As the name suggests, apple cider vinegar is made of two separate fermentations of fresh apple juice extracted from crushed apples. The first fermentation, from yeast, makes it into a cider, and the second from bacteria turns the cider into vinegar. 

Vinegar is mostly water and contains roughly 2 calories per tablespoon. Apple cider vinegar contains no fat and very low sodium and contains healthy acids, enzymes, and trace elements of potassium, phosphorus, magnesium, sulfur, and calcium. Because of this, traditional healers have extolled the virtues of apple cider vinegar for centuries.

  • Vinegar kills bacteria – Growing up, you may have heard your mother or grandmother say vinegar is an excellent cleaning solution. Vinegar has been applied to mild sunburn, treat nail fungus and athlete’s foot, and even been used to remove lice.

How Much Caffeine Is Too Much?

Look at any health journal or article about caffeinated drinks, and you will see conflicting information about whether caffeine is good or bad for your health. Yet caffeine is one of the most consumed supplements in the world. Most people drink it for the energy boost it gives them in the morning and throughout the day. Some of the more well-known benefits of caffeine are:

  • Increased focus
  • Headache relief
  • Reduced appetite and potential weight loss
  • Reduces the risk of Type Diabetes
  • Can help those suffering from asthma
  • Can postpone the onset of neurological disorders, such as dementia  

According to the U. S. Food and Drug Administration (FDA), caffeine can be a part of a healthy daily diet. Of course, as with anything, it is possible to have too much of a good thing. Consuming too much caffeine can pose some serious health risks. Factors such as body weight, age, pre-existing health conditions, and medications can all play a role in just how much caffeine you can safely consume. So, how much caffeine is too much?

What is Caffeine?

Caffeine is a naturally occurring crystalline chemical compound that is found in a variety of foods, including coffee, tea, chocolate, some nuts, yerba mate (Ilex paraguariensis), and herbs such as kola nut (Cola acuminata & Cola nitida), and guarana (Paullinia cupana). Some manufacturers will also add caffeine to their products. Caffeine, known by its scientific name of 1,3,7 trimethylxanthine, is found within foods and even medications to help ease pain and activate the other chemical constituents in drugs. 

Caffeine affects the central nervous system and is considered a stimulant and a psychoactive compound. Despite its stimulating effects, caffeine is not regarded as addictive. Scientists have found that caffeine will affect the body when there are more than 15 milligrams per liter in the bloodstream.

What Is a Safe Dose of Caffeine?

According to the FDA, 400 milligrams of caffeine a day is safe for most adults. However, the American College of Obstetrics and Gynecology recommends that pregnant women or hoping to become pregnant consume no more than 200 milligrams of caffeine, which is equivalent to 1 or 2 cups of coffee or tea. 

The American Association of Pediatrics (AAP) recommends that caffeine in children be limited as much as possible, and adolescents should not consume more than 100 milligrams of caffeine per day. Because children cannot properly process caffeine in the way that adults can, parents need to watch what their children are consuming in terms of sodas or energy drinks. Even nursing mothers are advised to limit their caffeine intake because it can go directly to their babies via breast milk.

What Are the Side Effects of Caffeine?

Some side effects of caffeine include:

  • Feeling hyper-alert
  • Increased heart rate or breathing
  • Feeling “jittery”
  • Anxiety or restlessness
  • Dehydration
  • Headache

If the side effects are mild, they will usually subside within 3–5 hours. Further precautions to take include:

  • Not consuming any more drinks containing caffeine
  • Taking a walk to ease feelings of restlessness
  • Drink water to help rehydrate

Is a Caffeine Overdose Possible?

Caffeine overdoses in healthy adults are rare. However, it is possible to overdose on caffeine. There are caffeine supplements available on the marketplace. It is far more likely for someone to suffer a caffeine overdose by taking these types of supplements rather than from drinking too much tea or coffee. 

Unlike drinking caffeinated beverages, these supplements contain a purified, much higher concentration of caffeine. The FDA estimates that a single teaspoon of powdered caffeine contains the equivalent of 28 cups of coffee! 

Some symptoms associated with having had too much caffeine are:

  • Heart palpitations or increased heart rate
  • Shakiness
  • Confusion
  • Nausea or vomiting
  • Panic Attacks

Anyone who experiences these symptoms should see a doctor or healthcare professional immediately. A caffeine overdose may require treatment such as intravenous fluids or other treatments that only a doctor can administer. 

Those who have died from caffeine overdose generally suffer ventricular fibrillation. This happens when the lower chambers of the heart muscle don’t fully contract. When the heart doesn’t contract fully, the heart stops beating normally and triggers cardiac arrest. 

Who Should Avoid Caffeine?

Caffeine overdoses happen far more often in children and those with pre-existing health conditions or who are taking medications that can cause severe side effects. You should avoid consuming caffeine if:

  • You have high blood pressure or hypertension
  • You take blood thinners
  • You have irritable bowel syndrome (IBS) or gastroesophageal disorder (GERD)
  • You have glaucoma
  • You suffer from sleep disorders or suffer from anxiety
  • You have epilepsy
  • You have kidney or liver problems

Know What’s In Your Cup

According to the Mayo Clinic, here is the breakdown of the average amount of caffeine in coffee, tea, sodas, energy drinks, and chocolate. These stats use an 8 oz. standard, the same size as a normal cup of tea.

It’s rare to find a 8 ounce serving of soft drinks, so these caffeine amounts are a little low for the standard can of coke, which has anywhere from 33-38 grams of caffeine per can. Plus, energy drinks usually come in a 16 oz. can, pushing each one of those to over 140 mg of caffeine each!

On top of that, both soft drinks and energy drinks often contain sugar or sugar substitutes for flavor, both of which cause health issues over time like obesity. Artificial sweeteners can cause a lot of damage to your brain and metabolism.

In some of our earlier blog posts, we talked about whether tea or coffee is better for you. While coffee remains very popular in the U.S., tea is by far more popular around the world. 

One reason for tea’s popularity is that while tea typically contains fewer caffeine alkaloids than coffee, the effect of increased alertness is gentler and, according to several scientific studies, lasts longer.  

Other added benefits include the potential to lower blood pressure and free radical reduction through antioxidants. These are good reasons to consume tea or coffee as a part of their healthy daily diet. If your daily cup of Joe is proving too much and making you feel edgy, consider transitioning from coffee to tea.

Celebrating Memorial Day

Immediately following Easter and Mother’s Day is the next holiday on almost everyone’s calendar. Memorial Day is not just a day that we can get away from work; it’s a day for celebrating with family and friends. It’s also a day set aside for remembering those who gave the ultimate sacrifice for the life that we enjoy and can sometimes take for granted. 

A Short History of Memorial Day

Originally called Decoration Day, this holiday was first celebrated in 1868. It was intended as a national day of mourning for those who died in the line of duty in our military. We traditionally celebrated this day on May 30th from 1868 to 1970. In 1971 we changed it to occur on the last Monday in May. The holiday was first referred to as Memorial Day in 1890 and became better known after World War II.

Today Memorial Day is celebrated as the first three-day weekend of summer. However, many within the military, particularly the Veterans of Foreign Wars VFW, believe that making Memorial Day a part of a three-day weekend undermines the actual meaning and significance of the holiday.

In 2000 Congress passed the National Moment of Remembrance Act, asking citizens to stop for a moment at 3:00 p.m. and remember those who gave their lives in sacrifice for our country. 

The National Memorial Day concert takes place on the West Lawn of our nation’s Capitol each Memorial Day and gets broadcast on public television (PBS) and National Public Radio (NPR).

Celebrating Memorial Day Today

There’s nothing wrong with looking forward to having a three-day weekend to spend time at home relaxing and spending time with friends and family. However, if you also want to honor our fallen heroes, you can also:

  • Attend a Memorial Day parade
  • Place flags on the graves of fallen veterans
  • Attend a VFW event in your community
  • Pause for the National Moment of Remembrance at 3:00 p.m. and remember those who gave their lives to protect us.
  • Attend a local Memorial Day concert or tune into the National Concert on PBS or NPR.

Memorial Day Party Ideas

To set off the patriotic mood, decorate your home and spice up table settings with lots of red, white, and blue to mark the unofficial beginning of summer. Below are some great, traditional recipes that go above and beyond the usual backyard fare for you to experience this Memorial Day.

Spicy Grilled Chicken

If you want to get beyond burgers and steak or have another meaty taste option, this recipe features a savory and spicy punch you’re sure to love.

Prepare a marinade to be used overnight on the chicken thighs, breasts, wings or drumsticks using:

¼ cup of Balsamic Vinegar

2 Tablespoons of Extra Virgin Olive Oil

2 Tablespoons of Honey

1 Tablespoon of Minced Ginger

½ teaspoon of Salt

½ teaspoon of Black Pepper

Put in a plastic bag and let marinate in the refrigerator overnight. Once your barbeque grill is prepared and up to temperature, place the chicken on the grill. You can brush your favorite barbeque sauce or prepare the following barbeque sauce instead.

½ Cup of Ketchup

2 Tablespoons of Worcestershire Sauce

½ Cup Tightly Packed Brown Sugar

¼ teaspoon Onion Powder

¼ teaspoon Garlic Powder

1 ½ teaspoon of Liquid Smoke

1 teaspoon of Minced Ginger (optional)

Combine the ingredients together over medium heat until the sauce starts to bubble. Remove from heat and allow to cool. Store any leftovers in a Mason or other airtight jar.

Classic Potato Salad

3 pounds of washed, peeled, and cubed Russet Potatoes

½ cup of Vidalia or Yellow Onion

4 Hard-Boiled Eggs

1 cup of mayonnaise 

½ cup Yellow Mustard

½ cup of chopped Dill Pickles

2 ½ teaspoons Salt

A dash of Regular or Smoked Paprika

To prepare, bring a large pot of water to a boil, and add 2 ½ teaspoons of salt. Reduce the heat to medium high and let simmer for 10 minutes. Potatoes are done when they are easy to mash with a fork. Drain the potatoes, then put them back into the pan and mash three or four times with a potato masher. Leave the potatoes chunky.

Chop the hard-boiled egg, onion, and the pickle, then add the mayonnaise and mustard. Fold in the potatoes, mix well, chill and serve.

Perfect Summer Sun Tea

Iced tea is probably the most popular summertime drink. We would be remiss if we didn’t offer our take on this seasonal favorite.

For this, we recommend Sir Jason Winters Pre-Brewed Tea Original Formula. 

Measure ½ teaspoon for each desired serving and place in a tea ball. 

Place filtered water into a gallon glass jar, add the tea ball with the tea inside, and sit in full sun.

When your tea is the desired color, remove the tea ball and serve over ice. You may wish to add lemon, stevia, or your favorite natural sweetener to taste. 

No Bake Red White & Blue Cheesecake

 Here is a no bake, ultimately no hassle dessert treat that you and your Memorial Day guests will love. What’s more, it is light enough for warm weather and super simple to prepare.

For the Crust

12 Graham Crackers, crushed

6 Tablespoons of Melted Butter

¼ Cup Sugar

½ teaspoon Salt

A pinch of cinnamon (optional)

Combine the ingredients and press gently into a pie plate or tart pan. Refrigerate crust.

For the Filling

1 Cup of Heavy Cream

1 Cup of Powdered or Confectioners Sugar

Two 8-ounce packages of Cream Cheese

1 Lemon

Allow the cream cheese to reach room temperature. Combine the heavy cream and sugar with a mixer until stiff peaks begin to form. Add cream cheese and mix until smooth. 

Next, zest a bit of the lemon rind into the filling, then juice the entire lemon and mix into the cheese. Slowly add in the cream and sugar mixture until fully combined. 

Place the filling into the graham cracker crust and chill for 2 – 4 hours.

Hull and slice approximately 1 pound of fresh strawberries and arrange them around the outer circumference of the cheesecake. Fill the rest of the cheesecake center with about 1 pound of fresh blueberries. You will probably have some blueberries left over to serve on the side. Chill until you’re ready to serve and enjoy!
